feat(tests): added testing package, overhauled tests

Summary

• added testing package, overhauled tests
  • standardizes test fixtures, mocks, etc so we can easily write tests for various modules without re-mocking or focusing on the fixtures themselves
• rename socket-server.ts to socket.ts
