This PR upgrades Jupyter Book from v1 to v2.

Check list

  • outputs are present
  • book compiles with no warning ('jupytext' extra key ignored: notebook_metadata_filter)
  • quarto example generated separately is available
  • rendering is similar (book sections start open, no extra header etc)
  • previous redirects still work
