Retakes the docs screenshots from the Vandelay demo running bin/sable stamped 1.7.4, so every sidebar reads "Sable 1.7.4".

Commits:

• docs: refresh 1.7.4 demo screenshots (docs/assets/screenshots/*.png, docs/assets/guide-screenshots/*.webp)

The guide versions were already bumped in #497, so there's no second commit. sabledns.io publishes these in the matching sable-website PR; merge this one first so the next docs build keeps these images.

Notes:

• The demo's own capture follows the browser's default color scheme, and headless Chromium on Linux defaults to light. These were taken with a dark-mode Chromium wrapper (--force-dark-mode), no code change.
• unifi-card.png was retaken with the Playwright engine scrolled to the UniFi Host Sync card, because the demo's --screenshot capture lands on the top of the Integrations page. The next demo run will reframe it the old way unless scripts/demo/capture.go learns to scroll.
