What does this PR do?

  • Update the Dockerfile with the latest docker container version

A new version of Matomo was released to address security concerns.

How can a reviewer manually see the effects of these changes?

The review can log in to dev-matomo and look at the settings page to see that it is now running version 5.5.2.

NO

I see it is running Matomo 5.5.2. I do see an error about the plugins not being supported, but I'm assuming we can ignore that for the Dev instance.

Thanks. And, yes, the error message is because we don't install the premium plugins license key in the dev instance.
