HiPerGator plotnine issues

The standard kernels on HiPerGator keep breaking plotnine as other packages are added. We will probably want to make a custom env/kernel for this.

• Determine if this should be installed cluster/wide or provide instructions for course participants
• Determine if we should spend more time on env management in the course--this was a topic planned for another course on advanced topics
• Implement the fix.
